Enjoying Dahl…recipe from my friend Jenn. This makes a lot and can be seasoned to your tastes, extra veggies added as you like.

2 cups brown rice (dry)

2 cups red lentils

I lrg can crushed tomatoes

1 can coconut milk

1 onion

3 cloves garlic (or more)

Handful spinach

Several handfuls green beans (both are optional)

Olive oil/butter/coconut oil or a combo to melt in pan and sautee onions

2 carrots

1 stalk celery

1-2 cups water or veggie stock

Ginger root diced,if you like it

In saucepan, cook brown rice about 50-60 mins according to directions

Chop onions and garlic, and ginger

Melt butter/oil/coconut oil (I used half olive oil and half butter) in large pot on med

Add onions, garlic and ginger to pot

Chop carrots and celery while onions cook, stir onions occasionally, add carrots and celery

Measure and rinse lentils in strainer

After about 2 mins add water, coconut milk, tomatoes and lentils

Bring to a boil, then turn back to simmer and cover.

Cook on low 20-30 mins

Add curry podwer, etc to taste.

This freezes well and can even be served in a tortilla with avocado and lettuce the next day. Everyone in our family loves it! And it’s very inexpensive.

Helping make banana bread

Monday is now baking day at our house, and I already have my eye on these crackers.

Weekly theme days:

Monday-baking

Tuesday – painting

Wednesday –wash (probably hand washing as we are without laundry facilities!)

Thursday –craft/nature walk

Friday –polish wooden toys/bowls etc.

These are just the themes for Sapphire and I together, I’m working on meals based on the days of the week as well.
